    Whisk the chia seeds into the soy milk and leave for five minutes, then whisk again to break up any clumps.

    Cover and refrigerate for at least four hours, or overnight, until set to a soft pudding.

    Top with the sliced strawberries and chopped pistachios and serve cold.
