- Green lentils150 g
- Spinach200 g

Method

Fry the sliced onion in the oil until gold; set a third aside with a little of the oil.

Stir in the turmeric, add the cooked legumes and 1.2 litres of water, and simmer 20 minutes.

Add the chopped greens and herbs and cook a further 15 minutes.

Drop in the noodles and simmer until tender, stirring so they do not clump.

Fry the mint in the reserved onion oil for a few seconds.

Serve each bowl streaked with kashk and topped with the fried mint and onion.
