- White rice130 g
- Leek80 g
- Carrot60 g

Method

Pat the thighs dry, season with salt, pepper and a pinch of paprika.

Sear in half the olive oil over medium-high, 5 minutes per side, until cooked through. Rest under foil.

Lower the heat, add the remaining oil with the leek and carrot; sauté 4 minutes.

Stir in the garlic for 30 seconds, then fold through the cooked rice with a splash of water.

Cover for 2 minutes to warm through, then plate with the chicken, fresh parsley and a squeeze of lemon.
