Method

Pat the tilapia dry and season with salt, pepper and a pinch of paprika.

Heat half the olive oil in a non-stick pan over medium-high; sear the fish 3 minutes per side until just opaque.

Steam or blanch the green peas for 2 minutes; drain.

Whisk the remaining olive oil with the lemon juice, garlic and a pinch of salt.

Toss the arugula and peas with the dressing, top with the fish, and serve.
