Method

Warm the fava beans in a small pan over medium heat with a splash of water, about five minutes.

Mash roughly with the back of a spoon — leave plenty of whole beans for texture.

Stir in the cumin and lemon juice and taste for salt.

Spread into a shallow bowl, scatter over the diced tomato and parsley and pour the olive oil across the top.

Serve with warm pita for scooping.
