    Char the whole eggplants over a flame or under a hot grill until collapsed, then peel and chop the flesh.

    Fry the garlic in the oil until fragrant, add turmeric, then the eggplant and cook 5 minutes.

    Stir in the grated tomato with salt and pepper and cook until the liquid reduces, 8–10 minutes.

    Push the mixture aside, crack in the eggs and gently fold through until just set.

    Serve hot with flatbread.
