    Fry the onion slowly in the oil until deep brown and sweet, 15 minutes; reserve a third for topping.

    Add cumin and a little cinnamon to the pan with the remaining onion.

    Fold in the cooked lentils and rice, season well and warm through.

    Top with the reserved fried onion and serve warm or cold.
